My Last Ever Wedding Cake

Until the next one. Only for Michelle and Kelvin would I break my promise. My sister Clare made the cakes (lemon drizzle, chocolate biscuit and Victoria Sponge, if I remember correctly). I was a huge ball of stress making this, as I wanted it to look brilliant for them, and the fondant was prone to sweating, even with the windows open in a cold kitchen. Anyway, onwards and Up!wards.

My First Attempt at Macarons

Teal-tinted, but plain macaron flavour, with ganache. These turned out perfectly. The next time I made them was a disaster. Beginner's luck!

My First Wedding Cake

And I'd promised it would be my last, but that proved not to be true. I have even more respect for anyone that can handle that much white fondant without getting fluff on it. Anyway, was delighted to make a two tiered (chocolate Coca-Cola cake and Victoria sponge) cake for Adelina & Mihai.

Last-minute Lorax

A last-minute Lorax birthday cake for my housemate. So last minute that I decorated it on my bed while her birthday party was on. Would you belive me if I told you it only took 25 minutes to do? Well, it's true and it turned out really well! (Victoria sponge with raspberry and buttercream btw).

Sparky the Seal

My friend Ashling wanted to make a cake to support Galway Seal Rescue. We used Sparky the Seal (recently resuced from a diet of chips in the canal next to the Róisín Dubh).

Snowflake Christmas Cake

Even though fruit cake is *nasty*, I spent a while decorating this. I didn't bake this myself; I'm sure it was delicious to others.

Christmas Tree Cupcakes

Vanilla cupcakes with bourbon vanilla buttercream icing, hand-piped white chocolate shapes, chewable (as opposed to the the old school filling-rending) decorative silver balls and Dr. Oetker writing icing tinsel.
